This cake is a perfect balance of flavors bitterness of chocolate balanced with the prefect amount of sweetness, giving a burst of flavor in the mouth with fresh and juicy cherries and last but not the least fresh cream to take the flavors to another level.
Ingredients
Eggs – 6 pieces at Room Temperature
Cocoa Powder – ¼ Cup
Sugar – 1 Cup
Vanilla Essence – 2 tea spoon
Baking Powder – 1 Tea Spoon
Plain Flour – 1 ¼ Cup
Butter – 2 Table Spoon
Milk – 2 Table Spoon
Salt – 2 Pinches
Strawberry Sauce:
Strawberries – 250 grams
Sugar – 3 Table spoon
Water – 2 Table Spoon
Cream:
Whipping Cream – 600 ml
Sugar – ½ Cup
Sugar Syrup:
Water – 1 ½ Cup
Sugar – ½ Cup
Method:
1. Combine Flour. Cocoa Powder, Baking Powder and Salt and sieve together for three times and set aside.
2. Take a bowl and add milk and butter in it and set aside.
3. Take a heat proof bowl add eggs and sugar in the bowl and beat for 1 minute.
4. Transfer the egg mixture to the double boiler and beat the eggs for 3 minutes (use a timer to make sure that you are beating eggs for 3 minutes).
5. After 3 minutes remove the eggs from double boiler and beat the eggs again for 5 minutes.
6. Put the milk and butter bowl in the hot water of double boiler to dissolve the butter make sure that the stove is off.
7. Add Dry ingredients (Flour, Cocoa powder, baking powder and salt) into the Egg mixture and mix slowly with a spatula.
8. Add Vanilla Essence, Butter and milk to the eggs and again mix with slow hand.
9. Line 2 baking pans of 8 x 8 inches with parchment paper.
10. Transfer cake batter to the pans.
11. Preheat oven at 200 Degrees for 15 minutes.
12. Bake the cake for 20 to 25 minutes or till the skewer comes out clean at 170-degree C.
13. Cool the cakes on wire rack.
14. Prepare Sugar mixture, take a pan add water and sugar and cook until the sugar is dissolved.
15. For Strawberry Sauce, take a pan add strawberry chunks, splash of water and sugar.
16. Cook until strawberries are soft and water dry out.
17. For Cream Preparation, whip the cream with sugar until firm peaks form and chill it.
18. For Layering take one layer of the cake sponge, apply sugar syrup and whipped cream.
19. Apply strawberries on the whipped cream.
20. Put second cake sponge on top of the strawberry and cream layer and repeat the steps.
21. Apply whipping cream on the cake, cover cake with cream and level it.
22. Decorate the cake with whipped cream, strawberries and chocolate shavings and chill it before serving.
23. Cake is ready to be served.
