Ingredients for Chicken:
Chicken – 200 grams (3 small Breast – Cut open into Butterfly)
Salt – Half Tea Spoon
Cayenne Pepper – ½ Tea Spoon
Black Pepper – ¼ Tea Spoon
Ginger Powder – ¼ Tea Spoon
Garlic Powder – Pinch
Plain Flour – ¼ Cup
Bread Crumbs – ½ Cup
Egg – 1 (Beaten)
Olive Oil - 6 Table Spoon (2 Tb Spoon for each Chicken Fillet)
Butter – 3 Table Spoon (1 Tb spoon for Each Fillet)
Mozzarella Cheese – 1 Cup
Tomato Sauce:
Tomato Puree – 1 Cup
Garlic – 2 Cloves
Salt – ½ Tea Spoon
Black Pepper – ½ Tea Spoon
Paprika – ½ Tea spoon
Parsley – ½ Tea Spoon
Olive Oil – 2 Table Spoon
Side:
Broccoli – 1 Cup (Blanched)
Olive oil – 1/2 table spoon
Butter – 1/2 table spoon
Salt and Black pepper for seasoning
Method:
1. Take chicken breast and then butterfly cut them. Place cling film on a board, add your breast spread open, sandwich it in cling film and flatten it by using the flat side of a meat hammer.
2. Sprinkle salt, black pepper, cayenne pepper, ginger and garlic powder on both sides of the chicken breast and leave them to rest for 15 minutes.
3. Season the bread crumbs sprinkle some salt, pepper and parsley and mix well.
4. Beat an egg and set aside.
5. Spread flour, bread crumbs and egg on flat plates.
6. Now take one breast piece coat it with flour, then coat it in egg and last coat in the bread crumbs. Repeat this procedure for all chicken breasts.
7. Heat a pan, add olive oil and add breaded chicken breast piece.
8. Add Butter and Fry the chicken for 3 minutes on each side on medium low flame and golden it from both sides.
9. Repeat this step for all chicken breast pieces.
Tomato Sauce:
1. In a sauce pan add olive oil and heat.
2. Add garlic and parsley and sauté them.
3. Once fragrant add tomato puree.
4. Add salt, black pepper, paprika and mix well.
5. Let this sauce cook on high flame for 2 to 3 minutes than slow down the heat and cook for 10 minutes.
6. The sauce will be ready in 10 minutes and it should not be runny.
Side:
1. Heat a pan, add olive oil and butter.
2. Add broccoli, toss for 1 to 2 minutes.
3. Season it with salt and black pepper. Toss again and dish out.
Assembly of the dish:
1. Take a pan and add mozzarella cheese and let it melt on slow heat.
2. Now take a serving dish add the breaded chicken.
3. Place some tomato sauce on top of the chicken and some on the side.
4. Add broccoli to the platter on side.
5. Pour melted mozzarella cheese on top of the breaded chicken and serve hot.
6. Enjoy!
Note: Prepare the tomato sauce in advance and assemble the plate right after frying the chicken.
