Chicken Bread
Ingredients for Dough
Flour – 4 Cups
Egg – 1
Yogurt – ¾ Cup
Milk – ½ Cup
Oil – 2 Table spoon
Salt – 2 Tea Spoon
Sugar – 1 Table Spoon
Dry Activated Yeast – 2 Tea Spoon
Baking Powder -1 Tea Spoon
Method:
1. Sieve Flour, Baking Powder and salt together.
2. Sponge the yeast by mixing it with sugar and Luke Warm milk. Let the yeast rest for 15 minutes to activate.
3. Once yeast is activated, there will be foam on top of yeast bowl.
4. Add Yogurt to yeast and mix.
5. Add Egg and mix with yeast
6. Add oil and mix with the yeast.
7. Now add wet ingredients into the dry ingredient and knead a soft sticky dough.
8. Add some water or flour if required.
9. Apply oil on top of the dough, cover with plastic and let it rest for one hour at a warm place.
10. Preheat oven at 180 degrees centigrade for 20 minutes.
Chicken Filling:
Chicken– 300 grams (small cubes)
Capsicum – 1 Cup (mixed Colors)
Garlic – 2 large cloves (minced)
Green Chili – 1 Large (minced)
Parsley – ½ Tea Spoon
Paprika Powder – ½ Tea Spoon
Cumin Powder – ½ Tea spoon
Salt – 1 Tea Spoon
Black Pepper – ½ Tea spoon
Crushed Red chili – ½ Tea spoon
Cheese – 250 grams (Mozzarella)
Oil – 2 Table Spoon
Egg – 1 for egg wash (Beaten)
Sesame seeds– for sprinkling on the bread (Optional)
Black Seeds – for sprinkling on the bread (Optional)
Method for Filling preparation:
1. Add oil in a pan and heat it.
2. Add garlic, green chili and parsley and let it fry.
3. Once the garlic, green chili and parsley are fragrant add chicken.
4. Fry chicken until it changes the color.
5. Add rest of the dry spices and cook for 2 to 3 minutes.
6. Add capsicum and fry again.
7. Now cover the chicken and let it cook for 5 to 10 minutes until the chicken is tender, add water if it is too dry.
8. Now remove the lid and fry till excess moisture evaporate.
9. Remove the chicken from stove and transfer to a plate strain the oil.
10. Chicken filling should be at room temperature at the time of making the bread.
Chicken Bread making:
1. Take the dough out of the bowl to a clean and straight surface and deflate it.
2. Cut the dough into equal 4 pieces.
3. Take one piece and Roll the dough to a rectangular shape, cut the sides with a knife,
4. Add ¼ portion of chicken filling in the center.
5. Add ¼ cup of the mozzarella cheese on top of chicken.
6. and fold each side so they overlap each other like a braid.
7. Let the chicken bread rest for 10 minutes.
8. Egg wash the breads, sprinkle some sesame seeds and black seeds.
9. Bake bread in the pre-heated oven for 18 – 20 minutes or until the top turns golden brown at 180 degrees centigrade.
10. Take out of the oven apply some butter on top and serve fresh.
