Ingredients:
275 grams butter
275 grams brown sugar
225 grams sugar
2 large or 3 medium eggs
1 tsp vanilla extract
475 grams plain flour
2 tsp baking powder
1 tsp baking powder
340 grams good-quality milk chocolate chips
180 grams - Extra chocolate - 1 inch pieces to add in the center of cookies (180 grams or as per taste)
Salt - 1 Pinch
METHOD
1. Put the butter and sugars into a large mixing bowl. Beat together with an electric mixer with whisk attachment until smooth and light in color.
2. Break in the eggs one at a time, mixing as you break in each egg. Once the eggs are combined, add the vanilla extract.
3. Sift in the flour, baking powder, baking soda and salt. Change the whisk mixing attachment to paddle attachment and mix until all the dry ingredients are fully incorporated.
4. Add the chocolate chips and mix in until thoroughly combined.
5. Cover the dough in cling film, chill the dough in the fridge for 30 minutes before use. 6. Preheat the oven to 180C/350F/Gas .
7. Remove the dough from fridge after 30 minutes. Make small ball of dough by taking 1 table spoon/scope of the dough put one inch piece of galaxy chocolate in between the dough and make a round ball. Now place the cookies ball on a non-stick baking tray or a tray that has been lined with baking parchment.
8. You can freeze these cookie dough at any time and can bake them after keeping them out of the freezer for 30 mins.
9. Bake the cookies in preheated oven for 13 - 15 minutes, or until they are golden-brown on the edge and slightly paler in the center.
10. Remove from the oven and transfer to a wire rack to cool before moving to a Jar.
