Dahi Phulki - A Very Famous South Asian Street Food, gives your taste buds a tangy and spicy treat.

Ingredients for Phulki:


Gram Flour – 1 Cup

Salt – 1 Tea Spoon

Garlic Granules – ½ Tea spoon

Whole Cumin – 1 Tea spoon

Black Pepper – ¼ Tea spoon

Soda Bicarbonate – 1 Pinch

Water – to make the batter

Oil - for Frying


Ingredients for Yogurt Mix:


Yogurt – 2 Cups

Salt – ½ Tea Spoon

Black Pepper – ¼ Tea Spoon

Dry roasted and hand grinded Cumin and Coriander seeds - ½ Tea spoon

Red Chili Flakes - ¼ Tea spoon

Water – for desired consistency of yogurt

Garnish;

Chaat Masala – for sprinkling

Red Chili Flakes- for sprinkling





Method:


For Phulkies:

1. Take a large mixing bowl.

2. Mix gram flour with salt, garlic granules, cumin, black pepper and Soda.

3. Add water to make a batter using a whisk.

4. Make sure that batter is neither too thick nor to runny.

5. Heat oil in a pan.

6. Check that the oil is ready by adding one trail phulki when you see bubbles appearing around the phulki this means the oil is ready. The oil should not be smoking hot as this will burn the phulki from outside and it will remain uncooked from inside.

7. Start adding phulki in the oil as per your desired size and let them turn light golden color.

8. Take a large vessel fill it with water and add phulkies directly from the fry pan to the cold water vessel. This way phulkies will stay soft.


Method for Yogurt Mix:


1. Take a bowl, add yogurt, salt, black pepper, Dry roasted, hand grinded Cumin and Coriander seeds, and red chili flakes.

2. Beat the yogurt and add water to make desired consistency.


Final Assembly:


1. Take the serving bowl, take one phulki out from the cold water and press it gently in between your palms and remove the access water, now repeat this step for all phulkies.

2. Pour yogurt mix on top of the phulkies.

3. Garnish with Chaat Masala and Red Chili Flakes.
