FATTEH HUMMUS - MIDDLE EASTERN BOWL OF HEALTHINESS

Fatteh hummus is a very popular dish in the Middle East. It is a very common dish to be served for breakfast on Fridays. This can be served on brunches, lunch or dinner as starter or side. I prefer to serve it as main for Iftar during Ramadan as it is very filling meal.

Fatteh Hummus is a bowl of healthiness, crispy bread topped with chickpeas and creamy yogurt, having tanginess of lemon and hint of Tahina, garnished with your favorite nuts, pomegranate and olive oil. This dish is equally popular in Vegetarian and Non Vegetarian as its packed with protein and rich in nuts.




Ingredients:


Chickpeas – 1 ½ Cup (boiled - Warm at the time f assembly)

Boiled water from chickpeas – ½ cup Warm at the time f assembly

Khubuz Lebanese bread – 2 -3 small Khubuz cut in small pieces (you can substitute Khubuz with bread use 3 – 4 bread slices)

Yogurt – 2 Cups (Warm or at room temperature at the time f assembly, do not use Greek or Turkish yogurt, we need yogurt with running consistency)

Tahina Sauce – 2 Table Spoon

Lemon – 1 (Juice)

Garlic – 1 Clove finely chopped

Salt -1 Tea Spoon


For Garnish:

Almond – 3 Table Spoon (Silvered and fried in Ghee)

Cashew nuts – 3 Table Spoon (fried in Ghee) you can replace Cashew nuts with Pine nuts

Cayenne Pepper or Red Pepper for sprinkling

Parsley – finely chopped for garnishing

Olive oil – for garnishing


Method:

Take a bowl and add yogurt.

Add garlic, salt, lemon juice and tahini sauce in the yogurt and mix well.

Add some water if yogurt is thick. We need to bring yogurt into running consistency.

Cut day-old Khubuz bread into bite-sized pieces by drying them over night or you can brush Khubuz breads with olive oil, toast them well in a hot oven, then break them into bite-sized pieces by hand.

Take a deep serving dish, spread Khubuz or bread in the bottom.

Add water from boiled chickpeas on the Khubuz or bread.

Add yogurt and mix in a way that all pieces of Khubuz or bread are fully covered.

Add balance chickpeas.

Add balance yogurt on the top and make it plain from the top.

Garnish with fried dry fruits.

Add pomegranate and parsley.

Sprinkle the Cayenne pepper or red chili.

Finally add Olive oil on the top.

Fatteh Hummus is ready.
