Sharing with my Suroo Bee Family some of my tried and tested Sauce Recipes.

Raita or Mint, Coriander and Yogurt Green Chutni/Sauce
Ingredients
Mint leaves - 1 cup
Coriander leaves - 1 cup
Green chili - 3 large
Garlic - 2 cloves
Whole cumin - 1 tea spoon
Yogurt - 1 cup
Salt - as to taste
Method:
1. Add all ingredients except salt and yogurt in the blender jug and blend
to make a paste.
2. Take this green mixture out of the blender jug.
3. Add yogurt and salt.
4. Raita or Mint, Coriander and Yogurt Chutni is ready.
Raita is served with all Savories, Snacks and Mains.
Tomato & Tamarind Sauce - Perfect Blend of Tanginess and Spices.
Ingredients:
Plum tomatoes - 1 can
Tamarind pulp - 3/4 cup
Garlic - 2 cloves
Ginger - 1 1 small piece
Black salt - 1 tea spoon
Crushed red chili - 1 tea spoon
Red chili powder - 1 tea spoon
Whole spices - 1 tea spoon
Chaat spices - 1 tea spoon
Whole cumin - 1 tea spoon
Salt - to taste
Method:
1. Remove seeds and skin from the plum tomatoes.
2. Grind tomatoes, tamarind pulp, ginger and garlic together.
3. Strain the mixture of tomatoes, tamarind, ginger and garlic using a sieve.
4. Add black sea salt, cumin, red chili powder, crushed red chili, whole spices, chaat spices and salt to the strains mixture of tomatoes and tamarind.
5. Add one cup of water and cook on medium flame.
6. Bring the mixture to boil and than cook until desired consistency is achieved.
7. Cool the Sauce and bring on Room temperature and transfer into sterilized Glass Jar and store in fridge.
This Sauce is best to serve with Chaats, Samoosas, Pakoras, Kachori and fried items.

Date & Tamarind Sauce - A Lip Smacking Combination of Sweet and Tangy Flavors
Ingredients:
Tamarind pulp - 1 cup
Dates - 8 to 10 pieces
Garlic - 2 pairs
Ginger-1 small piece
Black salt - 1 tea spoon
Whole cumin - 1 tea spoon
Crushed red chili - 1 tea spoon
Red chili powder - 1 tea spoon
Fennel seeds - 1 tea spoon
Salt - to taste
Sugar - 2 table spoon
Method:
1. Remove seeds from the dates and soak them to be soft.
2. Grind deseeded dates, tamarind pulp, ginger and garlic together.
3. Strain the mixture of dates, tamarind, ginger and garlic using a sieve.
4. Add black sea salt, cumin, red chili powder, crushed red chili, fennel seeds, salt and sugar to the strains mixture of Dates and tamarind.
5. Add one cup of water and cook on medium flame.
6. Bring the mixture to boil and then cook until desired consistency is achieved.
7. Cool the Sauce and bring on Room temperature and transfer into sterilized Glass Jar and store in fridge.
This Sauce is best to serve with Chaat, Dahi Baray, Pani Puri, Sev Puri, chana papri and many more Savory items.

Green Sauce - A burst of Flavors into your mouth
Ingredients:
Mint - 1 cup
Coriander - 1 cup
Tamarind pulp - 1 cup
Garlic - 10 cloves
Whole cumin - 1 table spoon
Whole red chili - 12- 14 pieces
Green chili - 4
Salt - as to taste
Method:
1. Wash Coriander and Mint thoroughly.
2. Grind all the ingredients together except Salt.
3. Add salt and give it a good mix.
4. Sauce is Ready.
5. Transfer the sauce into sterilized Glass Jar and store in fridge.
This Sauce is best to served with All type of Chaats, Fried items, Savory items and Mains.
