Mutton Karahi - A Very Famous Mutton dish that is found in the menu of every desi Restaurant

Mutton cooked in Ghee with perfect amount of spices and loads of tomatoes. Once done topped with green chilies, coriander, ginger and lemon juice served with pippin hot Naan or Chapati.

Here I am sharing you one of my most favorite and easy way of making mutton Karahi. Ready your meat in advance by boiling and you can make Mutton Karahi in Less than 30 minutes.

Perfect to be served on Gatherings/Parties/ Occasions as it is definitely a crow pleaser.


Ingredients

Goat meat - 500 grams with bones

Ghee - 3/4 Cup

Tomatoes - 3 large

Green Chilies - 4 to 5

Garlic Ginger Paste - 2 table spoon

Lemon juice - 2 table spoon

Bay Leaf - 3 small

Cinnamon - 2 small sticks

Yogurt - half a cup

Salt - to taste

Turmeric - Half a teaspoon

Roasted cumin seeds - 1 1/2 tea spoon

Roasted chopped coriander - 1 tea spoon

Whole spice mix - 1 tea spoon

Red Chili Powder - 1/2 tea spoon

Crushed Red Chili - 1/2 tea spoon

Finely chopped green chilies - 2 table spoon

Fresh coriander stalks - finely chopped 1 table spoon

Butter - 3 table spoon

Dried fenugreek - 1 table spoon

For Garnish

Fresh coriander , ginger and green chilies


Method:

1. Wash the meat thoroughly and put it in the cooking pan, add water and boil. Once water is boiled discard the water add fresh water in the meat and boil again. Repeat this step three times

2. Once done with the step one, add water, ginger, garlic paste, turmeric, bay leaves, cinnamon sticks and salt to the meat and cook till 70% tender.

3. When the meat is tender, add tomatoes and finely chopped and silted green chilies, cover the lid and cook.

4. When the tomatoes are tender, mash the tomatoes and let the water dry.

5. Add ghee and dry spices to the meat and fry.

6. Add the chopped coriander stalks and mix well.

7. Fry the Masala for 5 -10 minutes.

8. Add yoghurt on slow heat and mix well. Cover the lid and let it cook for 10 minutes.

9. When the ghee separates from the masala, add all spices mix, lemon juice dried fenugreek and cook covered for 2 to 3 minutes.

10. Now add butter, fresh coriander, finely chopped ginger and green chilies to the Karahi.

11. Melt the butter by covering the lid.

12. Mutton Karahi is ready.

13. Enjoy!
